  • 2 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, lightly beaten
  • Olive oil spray

Instructions

  1. Pat the chicken breasts dry with paper towels. If they’re thick, slice them in half horizontally for even cooking.
  2. In one shallow bowl, beat the eggs. In another bowl, mix the Parmesan, panko breadcrumbs, garlic powder, paprika, salt, and pepper.
  3. Dip each chicken breast into the egg mixture, letting the excess drip off. Then coat it thoroughly in the Parmesan mixture, pressing gently so it sticks.
  4. Preheat the air fryer to 375°F (190°C) for 2-3 minutes.
  5. Place the coated chicken breasts in the air fryer basket in a single layer. Spray them lightly with olive oil spray.
  6. Cook for 10 minutes, then flip and cook for another 8-10 minutes or until golden brown and the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the air fryer and let it rest for 2-3 minutes before serving.

Notes

For best results, use freshly grated Parmesan and avoid overcrowding the air fryer. Reheat leftovers in the air fryer to regain crispiness.
