  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 cups apples, peeled and diced (firm varieties like Granny Smith or Honeycrisp)
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13 pan with parchment paper or grease it well.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, use a hand mixer to beat the softened butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes.
  4. Beat the eggs in one at a time, followed by the vanilla extract, until fully incorporated.
  5. Gradually add the dry mix into the wet mix, stirring until just combined. Don’t overmix.
  6. Gently fold in the diced apples with a spatula, ensuring they’re evenly distributed throughout the batter.
  7. Pour the batter into the prepared pan and smooth it out with a spatula.
  8. In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of cinnamon. Sprinkle it evenly over the batter.
  9. Bake for 30-35 minutes, or until a toothpick inserted comes out clean and the top is golden brown.
  10. Let the bars cool completely in the pan before slicing into squares. Serve and enjoy!
