  • 1/2 cup diced yellow onion
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon garlic powder

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1 teaspoon white vinegar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Pinch of salt
  • 12 Hawaiian rolls (split in half horizontally)
  • 8 slices American cheese (or cheddar)
  • 1/2 cup dill pickle slices
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder (for topping)
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment or spray with nonstick spray.
  2. In a large skillet over medium heat, cook ground beef and diced onion for 6-8 minutes, breaking up the meat. When beef is browned and onions are soft, drain excess fat.
  3. Stir in salt, pepper, garlic powder, and mustard. Cook for 2 more minutes until fragrant. Remove from heat and let cool slightly.
  4. In a small bowl, whisk together mayonnaise, ketchup, sweet pickle relish, mustard, vinegar, onion powder, paprika, and a pinch of salt to make the special sauce.
  5. Using a sharp bread knife, slice the package of Hawaiian rolls in half horizontally (keep them attached). Place the bottom layer in the baking dish.
  6. Spread the cooked beef mixture evenly over the bottom half of the rolls.
  7. Lay cheese slices over the beef, overlapping for full coverage. Scatter pickle slices evenly on top.
  8. Spoon or drizzle the special sauce over the pickles and cheese, smoothing for even coverage. Reserve extra sauce for dipping.
  9. Place the top layer of rolls over the fillings. Mix melted butter with garlic powder and brush over the tops. Sprinkle with sesame seeds if desired.
  10. Cover loosely with foil and bake for 15 minutes. Remove foil and bake another 5-7 minutes, until cheese is melted and tops are golden brown.
  11. Let cool for 5 minutes, then slice or pull apart. Serve warm with extra sauce.

Notes

Drain beef mixture well to prevent soggy rolls. Assemble ahead and refrigerate for up to 24 hours; add 5 minutes to baking time if baking from cold. For gluten-free or dairy-free, use appropriate rolls and cheese. For extra flavor, add caramelized onions or sriracha to the sauce.
