Creamy, spicy, and cheesy buffalo chicken stuffed shells are a comforting and flavorful dish that’s perfect for weeknight dinners or potlucks.

Ingredients

  • Jumbo pasta shells
  • Cooked shredded chicken
  • Buffalo sauce
  • Cream cheese, softened
  • Ranch dressing
  • Shredded mozzarella cheese
  • Blue cheese crumbles (optional)
  • Green onions, finely chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook the jumbo shells until al dente, according to package instructions. Drain and set aside to cool slightly.
  3. In a large mixing bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, and ranch dressing. Mix until fully combined and creamy.
  4. Using a spoon, fill each pasta shell with the buffalo chicken mixture. Be generous—each shell should be packed but not overflowing.
  5. Spread a thin layer of buffalo sauce on the bottom of your baking dish. Arrange the stuffed shells in a single layer over the sauce.
  6. Sprinkle shredded mozzarella over the shells, followed by blue cheese crumbles if using.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes. Sprinkle with chopped green onions before serving.

Notes

[‘Don’t overcook the pasta shells; they should be slightly firm to hold the filling without breaking.’, ‘Use room-temperature cream cheese for a smoother filling.’, ‘Adjust the amount of buffalo sauce to suit your spice preference.’, ‘You can prepare the stuffed shells ahead of time and refrigerate them. Add 5-10 minutes to the baking time if chilled.’, ‘These freeze beautifully, so make extra to save for a later meal.’]
