  • 2 tsp Cajun seasoning
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, finely diced
  • 2 garlic cloves, minced
  • 1 cup tomato sauce
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 12 tsp hot sauce (optional)
  • 4 sandwich buns or brioche rolls
  • Optional toppings: sliced pickles, shredded lettuce, creamy coleslaw

Instructions

  1. Heat a large skillet over medium-high heat. Add a drizzle of oil and let it warm up for a minute.
  2. Add the ground chicken to the skillet. Cook for 5-7 minutes, breaking it up with a wooden spoon until fully browned. Remove and set aside.
  3. In the same skillet, add a bit more oil if needed and sauté the diced onion, garlic, and bell peppers for 3-4 minutes, or until softened.
  4. Return the chicken to the skillet and stir in the Cajun seasoning. Cook for 1-2 minutes to toast the spices and release their aroma.
  5. Reduce the heat to medium. Add the tomato sauce, Worcestershire sauce, brown sugar, and hot sauce (if using). Stir until everything is well combined.
  6. Simmer the mixture for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.
  7. While the mixture simmers, lightly toast your sandwich buns in the oven or on a skillet for extra texture.
  8. Spoon the Cajun chicken mixture onto the buns. Add optional toppings like pickles or coleslaw, if desired.
  9. Serve warm and enjoy the delicious messiness!
