These Carolina coconut cookies are crispy at the edges, chewy in the middle, and bursting with coconut flavor. Quick and easy to make, they’re the perfect summer treat for any occasion and always a crowd-pleaser.

  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/3 cup (67g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon (5ml) pure vanilla extract
  • 1/4 teaspoon (1ml) almond extract (optional)
  • 3/4 cup (90g) all-purpose flour
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1 1/2 cups (120g) sweetened shredded coconut

Instructions

  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar with a hand mixer on medium speed for 2-3 minutes until light and fluffy.
  2. Add the egg, vanilla extract, and almond extract (if using). Beat until fully combined, about 30 seconds.
  3. In a separate small bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until no streaks of flour remain.
  5. Fold in the shredded coconut with a spatula or wooden spoon. The dough will be thick and sticky.
  6. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  7. Scoop tablespoons of dough (about 1.5 tablespoons per cookie) onto the baking sheet, spacing them 2 inches apart.
  8. Bake for 9-11 minutes, rotating the pan halfway, until edges are deep golden brown and centers look set but still soft.
  9. Let cookies cool on the baking sheet for 3 minutes, then transfer to a wire rack to finish cooling.

Notes

For extra flavor, use almond extract and sprinkle flaky sea salt on top before baking. Use room temperature butter and egg for best texture. Do not overmix the dough. For gluten-free cookies, substitute a 1:1 gluten-free flour blend. Cookies can be frozen for up to a month. Let cool completely before storing in an airtight container.
