  • 2 cups cooked rice (white or brown)
  • 8 ounces cream cheese, softened
  • 1 cup sour cream (or Greek yogurt)
  • 1 can (4 ounces) diced green chilies
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (14 ounces) diced tomatoes, drained
  • 2 tablespoons taco seasoning
  • Cilantro, optional, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your 9×13-inch baking dish lightly with cooking spray.
  2. In a large mixing bowl, combine the shredded chicken, cooked rice, cream cheese, sour cream, diced green chilies, taco seasoning, and canned tomatoes. Mix until everything is well combined.
  3. Spread half of the shredded cheddar cheese evenly across the bottom of the prepared baking dish.
  4. Pour the chicken mixture into the dish, spreading it evenly with a spatula.
  5. Top the casserole with the remaining cheddar cheese and all the Monterey Jack cheese.
  6. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown.
  7. Remove from the oven and let it cool for 5 minutes before serving. Garnish with chopped cilantro if desired.
