Instructions

  1. In a large bowl, combine ground beef with kosher salt, black pepper, garlic powder (if using), and Worcestershire sauce. Mix gently without overworking the meat. Form into four equal patties about ¾ inch thick and press a slight dimple in the center of each.
  2. Whisk together mayonnaise, ketchup, yellow mustard, apple cider vinegar, smoked paprika, garlic powder, and cayenne pepper in a small bowl. Adjust seasoning to taste and refrigerate.
  3. Preheat a cast iron skillet or grill pan over medium-high heat until hot. If using a grill, preheat to medium-high and lightly oil the grates.
  4. Cook patties on the hot surface for 4-5 minutes on the first side until a brown crust forms. Flip and cook another 3-4 minutes for medium doneness. Add cheese slices during the last minute if desired and cover to melt. Use a meat thermometer to ensure internal temperature reaches 160°F (71°C).
  5. Slice and toast buns lightly on the pan or grill until golden and warm, about 2 minutes.
  6. Assemble burgers by spreading secret sauce on both bun halves. Layer bottom bun with lettuce, beef patty, pickles, onions, and tomato slices if using. Top with the bun and serve immediately.
