  • 4 cups Russet or Yukon Gold potatoes, peeled and diced
  • 1 pound cooked smoked sausage or Italian sausage, sliced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped green onions, crumbled bacon

Instructions

  1. Peel and dice the potatoes into bite-sized cubes. Set them aside.
  2. Slice the sausage into thin rounds and chop the onion finely.
  3. In your crockpot, combine the potatoes, sausage, onion, garlic, and chicken broth.
  4. Season with salt and pepper to taste. Stir everything gently to combine.
  5. Cover the crockpot with the lid and cook on high for 3-4 hours, or low for 6-8 hours, until the potatoes are tender.
  6. In a small mixing bowl, whisk together the heavy cream and melted butter. Pour this mixture into the crockpot during the last 30 minutes of cooking.
  7. Stir the soup well and let it cook for the remaining time to thicken slightly.
  8. Taste and adjust seasonings if needed. Serve hot with your favorite toppings, like shredded cheese, green onions, or crumbled bacon.

Notes

For a lighter version, use half-and-half instead of heavy cream. You can also swap sausage for turkey sausage or plant-based alternatives. Adjust seasonings towards the end for best flavor.
