  • 2 large eggs, room temperature
  • 1/3 cup vegetable oil (or melted butter)
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium mixing bowl, combine the cake mix, eggs, and vegetable oil. Stir until the dough forms and is smooth (it might be slightly sticky—that’s okay).
  3. In a small bowl, mix the granulated sugar and ground cinnamon to create the coating.
  4. Use a cookie scoop or tablespoon to portion out the dough. Roll each portion into a ball with your hands.
  5. Roll each dough ball in the cinnamon-sugar mixture, coating it evenly. Place the balls onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the cookies are set and slightly golden around the edges. Don’t overbake—these cookies are best when they stay soft.
  7. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
