Ingredients

  • 1 medium head of cauliflower, chopped into florets (about 4 cups)
  • 3 cups kale, chopped and stems removed (can substitute spinach)
  • 1 medium onion, finely diced
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free option)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • Optional: red pepper flakes for heat
  • Italian sausage (mild or spicy, depending on preference)

Instructions

  1. Heat olive oil in a large soup pot over medium heat. Add diced onion and sauté until translucent, about 4 minutes.
  2. Add minced garlic and cook for another minute, stirring frequently to avoid burning.
  3. Add sausage, breaking it into small pieces with a wooden spoon. Cook until browned and fully cooked, about 6-8 minutes.
  4. Stir in cauliflower florets and smoked paprika. Cook for 3-4 minutes to allow the cauliflower to absorb the flavors.
  5. Pour in chicken broth and bring the mixture to a boil. Reduce heat to low and let simmer for 15 minutes, or until cauliflower is tender.
  6. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, carefully transfer the soup to a blender, blending in batches.
  7. Return soup to the pot and stir in heavy cream. Taste and adjust seasoning with salt and pepper.
  8. Add chopped kale and simmer for an additional 5 minutes, or until kale is wilted and tender.
  9. Serve hot, garnished with a pinch of red pepper flakes for extra flavor if desired.

Notes

If the soup is too thick, add a splash of extra broth to thin it out. For a vegetarian version, swap sausage for mushrooms or plant-based crumbles.
