  • 1 cup (200g) packed brown sugar
  • ¼ cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving some overhang for easy removal.
  2. In a small bowl, mix 2 tablespoons of granulated sugar with 1 teaspoon of ground cinnamon for the topping. Set aside.
  3. In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth. Add eggs and vanilla extract, whisking until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, ground cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Mix just until combined.
  6. Pour the batter into the prepared pan and spread it out evenly. Sprinkle the cinnamon sugar mixture over the top in an even layer.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let the blondies cool completely in the pan before using the parchment paper to lift them out. Slice into squares and serve.
