Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving a bit of overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, and whisk until fully combined.
  3. In a separate bowl, whisk together the flour, cinnamon, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients using a spatula. Be careful not to overmix—stop as soon as there are no streaks of flour visible.
  5. In a small bowl, mix together the granulated sugar and ground cinnamon for the topping.
  6. Pour the batter into the prepared pan, spreading it out evenly. Sprinkle the cinnamon-sugar mixture generously over the top.
  7. Bake the blondies for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with just a few moist crumbs.
  8. Let the blondies cool in the pan for about 10 minutes before lifting them out using the parchment paper. Allow them to cool completely on a wire rack before slicing.
