Ingredients

  • Russet potatoes, peeled and diced
  • Yellow onion, finely chopped
  • Minced garlic
  • Low-sodium chicken broth
  • Heavy cream
  • Softened cream cheese
  • Shredded sharp cheddar cheese
  • Cooked and crumbled bacon
  • Salt and pepper
  • Optional garnishes: chopped chives, sour cream, extra cheese

Instructions

  1. Peel and dice the potatoes into 1-inch cubes. Finely chop the onion and mince the garlic.
  2. Add the potatoes, onion, garlic, and chicken broth to the crockpot. Season with salt and pepper.
  3. Cover and cook on high for 4 hours or low for 6-8 hours, until the potatoes are fork-tender.
  4. Using a potato masher, carefully mash some of the potatoes directly in the crockpot to thicken the soup. Leave some chunks for texture.
  5. Stir in the heavy cream and softened cream cheese. Mix until the cream cheese is fully melted and incorporated.
  6. Sprinkle the shredded cheese into the crockpot and stir until it melts into the soup.
  7. Cover and cook on low for an additional 15-20 minutes to allow the flavors to meld.
  8. Cook and crumble the bacon, chop the chives, and set out any additional garnishes.
  9. Ladle the soup into bowls and top with bacon, chives, extra cheese, or sour cream as desired.
