Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make the crust: In a mixing bowl, combine flour and salt. Add diced butter and use a fork or food processor to cut the butter into the flour until it resembles coarse crumbs. Slowly add ice water, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.
  3. Cook the filling: In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes to form a roux. Gradually whisk in chicken broth and milk, cooking until thickened. Add garlic powder, onion powder, salt, and pepper.
  4. Add the veggies and ham: Stir in diced ham, peas, carrots, and cooked potatoes. Cook for 5 minutes, then remove from heat.
  5. Assemble the pie: Roll out half the crust dough and fit it into the pie dish. Pour the filling into the crust. Roll out the remaining dough and place it over the top. Crimp the edges together and cut small slits in the top crust to vent.
  6. Bake: Brush the top crust with milk or egg wash for extra browning. Bake for 35-40 minutes, or until the crust is golden brown.
  7. Cool and serve: Let the pie cool for 10 minutes before serving.
