  • 12 cups diced leftover ham
  • 1 medium yellow onion, diced
  • 23 large carrots, peeled and diced
  • 23 stalks celery, chopped
  • 34 cloves garlic, minced
  • 2 medium-sized potatoes, peeled and diced
  • 2 cups cooked navy beans or cannellini beans
  • 8 cups chicken broth
  • 2 small bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Heat a drizzle of olive oil in a large stockpot over medium heat.
  2. Add diced onion, carrots, and celery. Sauté for about 5 minutes until softened and fragrant.
  3. Add minced garlic and cook for another minute, ensuring it doesn’t burn.
  4. Place the hambone in the pot and pour in the chicken broth. Add bay leaves and dried thyme.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for about 1.5 hours to extract flavors from the hambone.
  6. Remove the hambone from the pot and let it cool slightly. Pick off any remaining meat and return it to the pot. Discard the bone.
  7. Add diced potatoes and beans. Simmer for another 20-25 minutes until potatoes are tender.
  8. Season with salt and pepper to taste. Adjust seasonings as needed.
  9. Ladle into bowls and serve warm.
