Ingredients

  • Bay leaves

  • Whole black peppercorns
  • Apple cider vinegar (about 1 tablespoon)
  • Water (filtered if possible)

Instructions

  1. Prepare the chicken and vegetables: rinse and pat dry the whole chicken if using, chop carrots, celery, and onion into large chunks, and smash garlic cloves.
  2. Combine ingredients in the pot: place chicken or bones in a large stockpot, add vegetables, garlic, rosemary, thyme, bay leaves, peppercorns, and salt. Pour in cold water to cover by about 2 inches (approximately 12 cups).
  3. Add the apple cider vinegar and let sit for 20-30 minutes before heating.
  4. Bring to a gentle simmer over medium heat, avoiding boiling.
  5. Skim off foam and impurities that rise to the surface.
  6. Reduce heat to low, cover loosely, and simmer for 2 to 3 hours.
  7. Check seasoning and add hot water as needed to keep ingredients submerged.
  8. Remove from heat and strain broth through a fine mesh strainer or cheesecloth into a bowl or pot.
  9. Cool to room temperature, then transfer to airtight containers. Refrigerate up to 5 days or freeze for longer storage.
