Cozy Sausage Pasta Recipe with Fall Veggies for Dinner

A hearty and comforting pasta dish featuring smoky sausage, creamy sauce, and roasted fall vegetables, perfect for chilly evenings.

Ingredients

  • 12 ounces pasta (penne, fusilli, or your favorite shape)
  • Salt for boiling water
  • 8 ounces smoked sausage (sliced into rounds)
  • 2 cups butternut squash (peeled and diced)
  • 1 cup kale (chopped, stems removed)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/4 teaspoon nutmeg (optional)
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Heat a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove from the pan and set aside.
  3. In the same skillet, add a drizzle of olive oil. Toss in the butternut squash and cook for 8–10 minutes, stirring occasionally, until tender and slightly caramelized.
  4. Add the onion and garlic to the skillet. Sauté for 2–3 minutes, or until fragrant.
  5. Stir in the kale and cook until wilted, about 3 minutes. If the pan seems too dry, add a splash of the reserved pasta water.
  6. Return the sausage to the skillet. Pour in the heavy cream and chicken broth, stirring to combine. Add the Parmesan cheese and nutmeg, if using. Simmer for 3–4 minutes, letting the sauce thicken slightly.
  7. Add the cooked pasta to the skillet, tossing to coat in the sauce. If needed, add more pasta water to loosen the sauce.
  8. Season with salt and pepper to taste. Serve hot, garnished with extra Parmesan cheese if desired.
