Cozy Sausage Potato Sauerkraut Soup

A warm, hearty soup featuring smoked sausage, tender potatoes, and tangy sauerkraut, perfect for chilly nights and comforting meals.

  • 1 lb smoked sausage, sliced into thin rounds (kielbasa or andouille)
  • 4 medium russet potatoes, peeled and diced
  • 2 cups sauerkraut, drained and rinsed
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 6 cups chicken broth (or vegetable broth)
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Heat olive oil in a large stockpot over medium heat. Add sliced sausage and cook until browned, about 5 minutes. Remove sausage and set aside.
  2. In the same pot, sauté diced onion, sliced carrots, and minced garlic until softened, about 4-5 minutes.
  3. Pour in chicken broth and add diced potatoes. Bring to a simmer and cook for 15 minutes, or until potatoes are tender.
  4. Add sauerkraut, bay leaves, and browned sausage back into the pot. Stir to combine.
  5. Lower the heat and let everything simmer for another 10 minutes, allowing the flavors to meld together.
  6. Season with salt and pepper to taste. Remove bay leaves before serving.
  7. Garnish with fresh parsley if desired, and serve hot.
