  • 2 medium parsnips, peeled and cut into chunks
  • 2 large russet potatoes, peeled and cubed
  • 1 medium turnip, peeled and diced
  • 1 large yellow onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and black pepper, to taste
  • 3 tablespoons flour (or gluten-free flour/cornstarch for gluten-free option)
  • 2 tablespoons olive oil or vegetable oil

Instructions

  1. Pat the beef chuck cubes dry with paper towels. Toss the beef with flour, salt, and pepper in a large bowl until evenly coated.
  2. Heat olive oil in a large skillet over medium-high heat. Add the beef in batches and brown on all sides, about 3-4 minutes per batch. Transfer browned beef to the slow cooker.
  3. In the same skillet, add chopped onion and minced garlic. Cook for 2-3 minutes until softened and fragrant, scraping up browned bits from the pan. Add tomato paste and stir for another minute.
  4. Add sautéed onions, garlic, tomato paste, Worcestershire sauce, beef broth, thyme, and bay leaves to the slow cooker with the beef.
  5. Toss in the carrots, parsnips, potatoes, and turnips. Stir gently to distribute.
  6. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours until beef is fork-tender and vegetables are soft but not mushy.
  7. Remove bay leaves, taste the stew, and adjust salt and pepper as needed. If broth is thinner than desired, cook uncovered on high for 15-20 minutes to reduce.
  8. Ladle into warm bowls and serve with crusty bread or soft dinner rolls. Optionally, top with a dollop of sour cream or Greek yogurt.

Browning the beef before slow cooking adds depth of flavor. Avoid cutting root vegetables too small to prevent mushiness. Flour coating on beef helps thicken the stew.
