Cozy Slow Cooker Chicken Stew

A hearty and comforting chicken stew made with tender chicken, vegetables, and fragrant herbs, perfect for chilly days or busy evenings.

Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 4 medium-sized Yukon Gold potatoes, peeled and diced
  • 3 large carrots, peeled and sliced into rounds
  • 2 stalks celery, sliced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium recommended)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions

  1. Peel and dice the potatoes, slice the carrots and celery, chop the onion, and mince the garlic.
  2. Place the chicken thighs at the bottom of your slow cooker.
  3. Add the prepared vegetables on top: potatoes, carrots, celery, onion, and garlic.
  4. In a small bowl, whisk together the chicken broth and tomato paste until combined. Pour over the chicken and veggies.
  5. Sprinkle in the thyme, add the bay leaves, and season with salt and pepper.
  6. Cover and set your slow cooker to low. Cook for 6-8 hours, or until the chicken is tender and the potatoes are cooked through.
  7. Remove the bay leaves and shred the chicken directly in the slow cooker using two forks.
  8. If desired, stir in the heavy cream before serving for added richness.
  9. Taste and adjust the seasoning as needed.
  10. Ladle into bowls, garnish with fresh parsley if desired, and serve warm.

Notes

For a thicker stew, mash a few of the cooked potatoes or add a slurry of cornstarch and water. Customize with seasonal veggies or herbs for variety.
