Instructions

  1. Pat pork chops dry with paper towels and season generously with salt and black pepper on both sides.
  2. Heat 2 tablespoons oil in a large skillet over medium-high heat. Brown pork chops 3-4 minutes per side until golden. Remove and set aside.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add mushrooms and onions. Cook 5-6 minutes until mushrooms release moisture and onions soften.
  4. Add minced garlic and cook 1 minute until fragrant.

  7. Add fresh thyme leaves. Nestle pork chops back into the gravy. Cover and simmer on low heat for 15-20 minutes until pork reaches 145°F and is tender.
  8. Taste gravy and adjust salt and pepper. If too thick, add more broth or cream. Remove any thyme stems.
