  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 medium apples, peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ cup all-purpose flour
  • ¼ cup brown sugar, packed
  • ¼ cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Combine graham cracker crumbs, sugar, and melted butter in a bowl. Mix until evenly moistened, then press into the bottom of a greased 9-inch springform pan. Bake for 8–10 minutes, then set aside to cool.
  2. In a large bowl, beat cream cheese and sugar until smooth (about 2 minutes). Add eggs one at a time, beating after each addition. Stir in vanilla extract. Pour mixture over the cooled crust.
  3. Toss apple slices with sugar, cinnamon, and nutmeg until coated. Spread apples evenly over the cheesecake filling.
  4. Combine flour, brown sugar, and cold butter cubes in a bowl. Use fingers or a pastry cutter to mix until crumbly. Sprinkle topping over the apple layer.
  5. Place cheesecake in the oven and bake for 50–60 minutes, or until center is set but slightly jiggly. Let cool to room temperature, then refrigerate for at least 4 hours or overnight.
  6. Slice and serve chilled or warm with whipped cream or vanilla ice cream.
