  • 12 oz short pasta (penne, rigatoni, or fusilli)
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp Italian seasoning
  • Optional: 1/4 tsp red pepper flakes
  • Optional: Fresh parsley, chopped for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add finely chopped onion and garlic, sautéing until fragrant and translucent, about 3 minutes.
  3. Add ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned and fully cooked. Season with salt, pepper, and Italian seasoning.
  4. Reduce heat to low and stir in heavy cream and beef broth. Let the mixture simmer for 5 minutes to meld flavors.
  5. Stir in grated Parmesan cheese, letting it melt into the sauce. If the sauce is too thick, add a splash of reserved pasta water to loosen it.
  6. Add drained pasta to the skillet, tossing to coat evenly in the creamy sauce. Taste and adjust seasoning if needed.
  7. Sprinkle with freshly chopped parsley and red pepper flakes if desired. Serve hot and enjoy!
