  • 2 boxes (3 oz each) cherry Jello (gelatin dessert)
  • 1 cup (240 ml) Coca-Cola, cold
  • 1 can (21 oz) cherry pie filling
  • 4 oz (115 g) cream cheese, softened
  • 1 cup (240 ml) whipped topping (Cool Whip or homemade whipped cream)

Instructions

  1. Empty both boxes of cherry gelatin into a medium mixing bowl.
  2. Pour in 1 cup boiling water and whisk until completely dissolved (about 2 minutes).
  3. Stir in 1 cup cold Coca-Cola. The mixture will fizz slightly.
  4. Fold in 1 can cherry pie filling with a spatula.
  5. In a small bowl, microwave cream cheese for 10–15 seconds until softened. Add to gelatin mixture and whisk until mostly smooth.
  6. Gently fold in 1 cup whipped topping with a spatula until creamy and light pink.
  7. Transfer mixture to an 8×8-inch glass baking dish or serving bowl. Smooth the top.
  8. Cover with plastic wrap and refrigerate for at least 3 hours, or until set and jiggly. Overnight chilling is best for firmer texture.
  9. Once set, cut into squares or scoop into bowls. Garnish with extra whipped cream or fresh cherries if desired.

Notes

Use cold Coca-Cola for best texture and fizz. Soften cream cheese thoroughly to avoid lumps. Fold whipped topping gently to keep salad creamy. Chill overnight for firmer slices. For gluten-free or dairy-free, check labels and use appropriate substitutes. Garnish with whipped cream or cherries for extra flair.
