  • 8 oz (225 g) mascarpone cheese, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (240 ml) strong brewed espresso or very strong coffee, cooled
  • 2 tbsp coffee liqueur like Kahlúa (optional)
  • 1 tbsp granulated sugar
  • 24 ladyfinger cookies (savoiardi)
  • Unsweetened cocoa powder, for dusting
  • Bittersweet chocolate shavings (optional)

Instructions

  1. Prepare the coffee soak: Brew 1 cup (240 ml) of strong espresso or coffee and let it cool completely. Stir in 2 tbsp coffee liqueur (if using) and 1 tbsp sugar until dissolved. Set aside.
  2. Whip the cream: In a large mixing bowl, beat 1 cup (240 ml) cold heavy cream with a hand or stand mixer on medium-high speed until soft peaks form, about 3-4 minutes. Be careful not to over-whip.
  3. Mix mascarpone layer: In another bowl, combine 8 oz (225 g) softened mascarpone cheese, 1/2 cup (60 g) powdered sugar, and 1 tsp vanilla extract. Stir gently until smooth and creamy.
  4. Fold cream into mascarpone: Add about one-third of the whipped cream to the mascarpone mixture and fold gently using a spatula. Then fold in the remaining whipped cream until fully combined and airy.
  5. Assemble the tiramisu: Quickly dip each ladyfinger cookie into the coffee soak for 1-2 seconds per side. Line the bottom of a 9×9 inch dish with about 12 dipped ladyfingers.
  6. Add cream layer: Spread half of the mascarpone cream evenly over the ladyfingers.
  7. Repeat layers: Add another layer of dipped ladyfingers, then spread the remaining mascarpone cream on top.
  8. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  9. Finish with cocoa: Just before serving, dust the top generously with unsweetened cocoa powder through a fine sieve. Garnish with bittersweet chocolate shavings if desired.

Notes

Whip cream to soft peaks to avoid grainy texture. Dip ladyfingers quickly to prevent sogginess. Let mascarpone sit at room temperature for 30 minutes before mixing. Chill tiramisu overnight for best flavor and texture. For dairy-free, substitute mascarpone with dairy-free cream cheese and heavy cream with coconut cream. For gluten-free, use gluten-free ladyfingers or almond cookies.
