  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 16 oz potato gnocchi (store-bought or homemade)
  • 6 slices bacon, cooked until crispy and crumbled
  • 8 oz cream cheese, full-fat
  • 1 cup chicken broth (low-sodium preferred)
  • 1 packet ranch seasoning (or homemade blend)
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic, freshly minced
  • 1 cup heavy cream
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Remove and set aside on a paper towel-lined plate. Once cooled, crumble into small pieces.
  2. In the same skillet, add the chicken pieces with a pinch of salt and pepper. Cook over medium-high heat for about 5-6 minutes, stirring occasionally, until golden brown and fully cooked. Remove the chicken and set aside.
  3. Lower the heat to medium and add the cream cheese to the skillet. Stir until melted and smooth.
  4. Pour in the chicken broth, heavy cream, and ranch seasoning. Whisk everything together until the sauce is well combined.
  5. Add the gnocchi to the skillet. Cover with a lid and let simmer for about 4-5 minutes, or until the gnocchi is tender.
  6. Return the chicken and bacon to the skillet, along with the shredded cheddar cheese. Stir until the cheese melts and everything is coated in the creamy sauce.
  7. Sprinkle with green onions for a burst of freshness and serve immediately.
