  • 2 boneless, skinless chicken breasts, diced into bite-sized pieces
  • 16 ounces store-bought potato gnocchi
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 8 ounces cream cheese, softened
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 packet ranch seasoning
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped, for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add the diced bacon and cook until crispy. Remove the bacon, leaving some of the grease in the pan.
  2. Add the diced chicken to the skillet and season with salt and pepper. Cook for 5-7 minutes until the chicken is golden and cooked through. Remove the chicken and set aside.
  3. Lower the heat to medium. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  4. Stir in the softened cream cheese, chicken broth, heavy cream, and ranch seasoning. Whisk until the mixture is smooth and creamy.
  5. Bring the sauce to a gentle simmer, then add the gnocchi. Cook for 3-5 minutes, stirring occasionally, until the gnocchi are tender and the sauce thickens.
  6. Return the cooked chicken and bacon to the skillet. Stir in the shredded cheddar cheese and mix until melted and well combined.
  7. Remove from heat and garnish with fresh parsley. Serve immediately while it’s warm and creamy.

Notes

Use freshly shredded cheddar for better melting and flavor. Adjust salt after tasting the sauce if using a ranch packet. Avoid overcooking the gnocchi to maintain their texture.
