Instructions

  1. Preheat oven to 375°F (190°C). Line a small baking sheet or ovenproof dish with parchment paper.
  2. In a small saucepan, combine cranberries, honey, orange juice, orange zest, cinnamon, and a pinch of salt. Simmer over medium heat for 5-7 minutes, stirring occasionally, until cranberries burst and mixture thickens. Remove from heat and let cool slightly.
  3. In a small skillet over medium-low heat, melt butter. Add chopped pecans and toast for 2-3 minutes, stirring constantly, until fragrant and lightly golden. Set aside.
  4. Place brie wheel in the center of the lined dish. Score the rind in a crosshatch pattern if desired.
  5. Spoon cranberry mixture evenly over the brie. Sprinkle toasted pecans on top. Add rosemary sprigs or pomegranate arils if desired.
  6. Bake for 12-15 minutes, until brie is soft and gooey and topping is bubbling gently.
  7. Carefully transfer baked brie to a serving board. Let rest for 5 minutes. Garnish with extra orange zest, rosemary, or flaky salt if desired.
  8. Serve warm with crackers, toasted baguette, and fresh fruit.
