Instructions

  1. Cook 6 strips of bacon until crispy, drain on paper towels, and crumble once cooled (about 10 minutes).
  2. In a medium bowl, combine 8 ounces softened cream cheese with 1 packet ranch seasoning mix. Stir until smooth and well blended (2-3 minutes).
  3. Place 2 pounds boneless, skinless chicken breasts at the bottom of the crockpot. Spread the cream cheese mixture evenly over the chicken breasts (5 minutes).
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until chicken reaches an internal temperature of 165°F and is tender enough to shred.
  5. Using two forks, shred the chicken directly in the crockpot and stir to combine with the creamy sauce (5 minutes).
  6. Stir in the crumbled bacon and 1 cup shredded cheddar cheese. Cover again and cook for an additional 10-15 minutes until cheese is melted and bubbly.
  7. Give the mixture a final stir. If too thick, add a splash of milk or chicken broth to loosen. Serve hot over rice, pasta, or vegetables.

Notes

Do not skip softening the cream cheese for a smooth sauce. Cook bacon ahead to keep it crispy. Cook on low heat for tender chicken and avoid drying out the meat. Shred chicken gently with forks. Adjust seasoning at the end if needed. Leftovers store well in the fridge for up to 4 days or freeze for up to 3 months.
