  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 grams)
  • 1/2 cup sun-dried tomatoes, chopped (about 70 grams), packed in oil
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese (about 50 grams)
  • 1 teaspoon Italian seasoning
  • 2 cups fresh spinach (about 60 grams)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil

Instructions

  1. Mince 3 garlic cloves and chop 1/2 cup of sun-dried tomatoes. Rinse and roughly chop 2 cups fresh spinach. Set aside.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add garlic and sun-dried tomatoes, sauté for about 2-3 minutes until fragrant.
  3. Lay 4 boneless, skinless chicken breasts in the bottom of your slow cooker in a single layer.
  4. Spoon the sautéed garlic and sun-dried tomatoes evenly over the chicken breasts.
  5. Mix 1 cup heavy cream with 1/2 cup chicken broth in a bowl. Add 1 teaspoon Italian seasoning, salt, and pepper to taste. Pour this creamy blend over the chicken and tomatoes.
  6. Cover and cook on low for 5 to 6 hours until the chicken is tender and the sauce has thickened.
  7. In the last 15 minutes of cooking, stir in 2 cups fresh spinach and 1/2 cup grated Parmesan cheese. Replace lid and let spinach wilt and cheese melt into the sauce.
  8. Taste the sauce and adjust seasoning with salt and pepper if needed.
  9. Serve the creamy Tuscan chicken hot with your favorite sides.

Sautéing garlic and sun-dried tomatoes before adding to the crockpot enhances flavor significantly. Avoid lifting the lid frequently during cooking to maintain heat. If sauce is too thin after cooking, remove chicken and simmer sauce on high uncovered for 10-15 minutes to thicken. Fresh spinach can be substituted with kale or Swiss chard.
