A silky, comforting white chicken chili made in a slow cooker with cream cheese, white beans, and spices. Easy to prepare and perfect for cozy dinners.

  • 2 large boneless, skinless chicken breasts
  • 2 cans (15 oz each) white beans (Cannellini or Great Northern), drained and rinsed
  • 8 oz cream cheese, softened
  • 3 cups chicken broth
  • 1 can (4 oz) diced green chilies
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, shredded cheddar or Monterey Jack cheese, sour cream, lime wedges, sliced avocado

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Sprinkle chopped onion and minced garlic over the chicken.
  3. Add ground cumin, chili powder, oregano, salt, and pepper.
  4. Add drained and rinsed white beans and diced green chilies; stir gently to combine.
  5. Pour chicken broth evenly over the mixture.
  6. Cover and cook on low for 6 to 8 hours (or on high for 3 to 4 hours).
  7. About 30 minutes before serving, remove chicken breasts and shred with two forks.
  8. Return shredded chicken to the slow cooker.
  9. Cut softened cream cheese into chunks and stir into the chili until smooth and fully incorporated.
  10. Taste and adjust seasoning if needed.
  11. Serve hot with optional toppings.

Notes

Use room temperature cream cheese for smooth blending. Shred chicken before adding cream cheese to help it melt evenly. Avoid overcooking chicken to keep it tender. If cream cheese is not soft enough, microwave for 15 seconds before adding. Adjust spice level by adding jalapeños or cayenne pepper if desired.
