  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon apple cider vinegar
  • 1/2 teaspoon smoked paprika, plus extra for garnish
  • 2 tablespoons fresh chives, finely chopped
  • Salt and freshly ground black pepper to taste
  • Optional: dash of hot sauce
  • Optional: parsley or dill instead of chives

Instructions

  1. Place 6 large eggs in a medium saucepan and cover with cold water by about an inch (2.5 cm). Bring to a rolling boil over high heat, then cover, remove from heat, and let sit for 10-12 minutes.
  2. Transfer eggs immediately to an ice water bath. Let cool for at least 5 minutes. Gently tap each egg on a hard surface to crack the shell, then peel starting from the wider end.
  3. Slice the peeled eggs in half lengthwise. Carefully remove the yolks with a small spoon and place them in a mixing bowl.
  4. Mash the yolks with a fork until crumbly but smooth. Add 3 tablespoons mayonnaise, 1 tablespoon sour cream, 1 teaspoon Dijon mustard, and 1/2 teaspoon apple cider vinegar. Mix well until creamy.
  5. Stir in 1/2 teaspoon smoked paprika, 2 tablespoons fresh chives, salt, and pepper to taste. Add a dash of hot sauce if desired. Taste and adjust seasoning.
  6. Spoon or pipe the yolk mixture back into the egg white halves.
  7. Sprinkle extra smoked paprika and chopped chives over the filled eggs for garnish.
  8. Refrigerate for at least 30 minutes before serving.

Notes

Use slightly older eggs for easier peeling. Peeling eggs under running water helps remove shell bits. If filling is too thick, add a teaspoon of milk or extra sour cream to loosen. Refrigerate for at least 30 minutes to let flavors meld. Avoid overcooking eggs to prevent green yolk ring and sulfur smell.
