  • 1/4 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green chilies
  • 1/2 cup diced red bell pepper
  • 2 tablespoons finely chopped jalapeños
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Tortilla chips or crackers for serving

Instructions

  1. Prepare your ingredients: cut kernels off fresh corn, thaw and drain frozen corn, and dice red bell pepper and jalapeños finely.
  2. In a medium-sized mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Blend until smooth and creamy using a spatula or hand mixer.
  3. Add shredded cheddar cheese, chopped green chilies, diced red bell pepper, jalapeños, garlic powder, chili powder, salt, and pepper to the creamy mixture. Stir until evenly distributed.
  4. Gently fold in the corn kernels using a spatula, ensuring they’re well-coated but not crushed.
  5. Transfer the mixture to a serving dish and sprinkle fresh cilantro on top for garnish, if desired.
  6. Serve immediately with tortilla chips, or cover and refrigerate for up to 2 hours to let the flavors meld together.
