Plump, juicy blueberries coated in creamy yogurt, frozen to perfection, and topped with granola for a refreshing, guilt-free snack.

  • 1 cup (240g) Greek yogurt (plain or vanilla)
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract (optional)
  • 1 cup fresh blueberries, washed and dried
  • Granola for topping

Instructions

  1. Wash and dry the blueberries thoroughly to remove excess moisture.
  2. In a mixing bowl, combine Greek yogurt, honey, and vanilla extract (optional). Stir until smooth.
  3. Using a small spoon, coat each blueberry in the yogurt mixture and place it on a baking sheet lined with parchment paper.
  4. Sprinkle granola over the yogurt-coated blueberries while the yogurt is still wet.
  5. Freeze the clusters on the baking sheet for at least 2 hours or until completely firm.
  6. Transfer the frozen clusters to a storage container or serve immediately.

Notes

Work quickly to prevent the yogurt mixture from becoming runny. Use full-fat yogurt for a creamier texture and freeze immediately after coating the blueberries.
