  • 2 cups (475 ml) plain Greek yogurt (full-fat or 2%)
  • 23 tablespoons (30–45 ml) honey
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (150 g) mixed berries (fresh or frozen; blueberries, raspberries, strawberries, or blackberries)
  • ½ cup (60 g) crunchy granola
  • ¼ cup (30 g) chopped nuts (optional; almonds, walnuts, or pecans)
  • 2 tablespoons (30 g) dark chocolate chips or shavings (optional)

Instructions

  1. In a mixing bowl, combine 2 cups (475 ml) of plain Greek yogurt with 2 to 3 tablespoons (30–45 ml) of honey and 1 teaspoon (5 ml) of vanilla extract. Stir until smooth and creamy. Adjust sweetness if needed.
  2. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone baking mat.
  3. Pour the yogurt mixture onto the tray and spread evenly with a spatula to about ¼-inch (6 mm) thickness.
  4. Scatter 1 cup (150 g) of mixed berries evenly over the yogurt. Sprinkle ½ cup (60 g) of crunchy granola on top. If using, add ¼ cup (30 g) chopped nuts and 2 tablespoons (30 g) dark chocolate chips.
  5. Place the tray in the freezer and freeze until firm, at least 3 hours or overnight.
  6. Once frozen solid, lift the bark from the tray using the parchment paper and break into irregular pieces. Serve immediately or store in an airtight container in the freezer.

Notes

If yogurt is too runny, chill in the fridge for 15 minutes before spreading. Use full-fat Greek yogurt for creamier texture. Chunky granola clusters provide better crunch. Line baking tray with parchment paper to prevent sticking. Can substitute almond or coconut yogurt for dairy-free version and gluten-free cereal for granola if needed.
