Instructions

  1. Preheat your oven to 350°F (175°C) and position the oven rack in the center.
  2. Make the shortbread crust: In a medium bowl, combine 1 ½ cups flour, ⅓ cup sugar, and ¼ teaspoon salt. Cut in the softened butter using a pastry cutter or fingers until mixture resembles coarse crumbs. Press evenly into the bottom of a greased 8×8-inch baking pan. Bake for 18-20 minutes until edges are just turning golden.
  3. Prepare the filling: While the crust bakes, whisk together 3 eggs and 1 cup sugar in a large bowl until smooth. Add softened cream cheese and heavy cream; beat until silky and combined. Stir in lemon juice and culinary lavender buds. Sift in 2 tablespoons flour and mix gently but thoroughly.
  4. Pour the filling over the baked crust immediately after removing it from the oven. Return to oven and bake for 22-25 minutes until filling is mostly set but slightly jiggly in the center.
  5. Cool bars to room temperature, then refrigerate for at least 2 hours to fully set. Dust with powdered sugar before serving if desired. Use a sharp knife dipped in hot water for clean slices.
