  • 4 boneless, skinless chicken breasts (about 6 oz/170 g each), pounded to even thickness
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup finely grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Pinch of red pepper flakes (optional)
  • Handful of fresh basil, chopped

Instructions

  1. Place chicken breasts between two sheets of plastic wrap or inside a zip-top bag. Pound each breast to an even thickness of about 1/2 inch (1.3 cm).
  2. Season both sides of the chicken breasts generously with salt and black pepper. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat until shimmering but not smoking, about 2 minutes.
  4. Add chicken breasts to the skillet and cook without moving for 5 minutes until golden brown on the bottom. Flip and cook the other side for 4 minutes or until internal temperature reaches 165°F (74°C). Transfer chicken to a plate and tent with foil to rest.
  5. Reduce heat to medium. Add butter to the skillet, then minced garlic. Sauté for about 30 seconds until fragrant but not browned.
  6. Stir in sun-dried tomatoes and cook for 1 minute to release their flavor.
  7. Pour in chicken broth, scraping up any browned bits from the pan bottom. Let simmer for 2-3 minutes until slightly reduced.
  8. Lower heat to medium-low. Stir in heavy cream and Parmesan cheese. Cook gently for 4-5 minutes until the sauce thickens, avoiding boiling.
  9. Add Italian seasoning and red pepper flakes. Adjust salt and pepper to taste. Simmer for another minute.
  10. Return chicken breasts to the skillet, nestling them into the sauce. Spoon sauce over the chicken and warm together for 2-3 minutes.
  11. Sprinkle chopped fresh basil on top and serve immediately.

Notes

If sauce is too thick, add a splash more broth or cream to loosen. If too thin, simmer longer. Avoid high heat to prevent cream from curdling. Let chicken rest after cooking for juiciness. For dairy-free, substitute cream with coconut or cashew cream and Parmesan with nutritional yeast.
