  • 1 tablespoon olive oil
  • 1 pound cremini mushrooms, sliced thinly
  • 1 yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 8 ounces Brie cheese, trimmed of rind and cubed
  • 1 cup heavy cream
  • 23 sprigs fresh thyme
  • Salt and black pepper, to taste
  • Optional garnish: chopped parsley or drizzle of truffle oil

Instructions

  1. In a large soup pot, melt the butter with olive oil over medium heat. Add the sliced mushrooms and cook for 8-10 minutes, stirring occasionally, until golden brown and caramelized.
  2. Add the chopped onion and garlic to the pot. Sauté for another 3-4 minutes until the onion becomes translucent and fragrant.
  3. Pour in the chicken or vegetable broth, scraping the bottom of the pot to release any browned bits. Add the fresh thyme sprigs.
  4. Bring the mixture to a gentle simmer and cook for 15 minutes, allowing the flavors to meld together.
  5. Remove the thyme sprigs and carefully blend the soup with an immersion blender until smooth. If using a regular blender, blend in batches and return to the pot.
  6. Lower the heat and stir in the cubed Brie cheese, letting it melt completely into the soup. Add the heavy cream and stir until fully incorporated.
  7. Season with salt and pepper to taste. Let the soup warm through for 5 minutes, stirring occasionally.
  8. Ladle the soup into bowls, garnish with parsley or a drizzle of truffle oil, and serve hot.

Notes

For best results, sauté mushrooms without overcrowding the pan to ensure even browning. Trim the Brie rind for a smoother texture. This soup tastes even better the next day as the flavors deepen.
