A quick and easy one-pot skillet recipe combining ground beef, elbow macaroni, and a creamy cheese sauce for a comforting family dinner.

  • 2 cups (200g) dry elbow macaroni
  • 2 ½ cups (600ml) beef broth
  • 1 cup (240ml) whole or 2% milk (or dairy-free alternative like oat milk)
  • 1 ½ cups (170g) shredded cheddar cheese (sharp or mild)
  • ½ cup (60g) Velveeta cheese, cubed (optional)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Heat 1 tablespoon of olive oil or butter over medium-high heat in a large deep skillet.
  2. Add 1 pound (450g) ground beef, breaking it up with a spoon. Cook until no longer pink and starting to brown, about 6-8 minutes. Season with salt and pepper. Drain excess fat if desired.
  3. Sprinkle in 1 teaspoon each of onion powder and garlic powder, stirring to coat the beef evenly.
  4. Pour in 2 ½ cups (600ml) beef broth and 1 cup (240ml) milk. Stir to combine and bring to a simmer.
  5. Stir in 2 cups (200g) dry elbow macaroni, ensuring it is fully submerged. Reduce heat to medium-low and cover with a lid.
  6. Simmer pasta for 10-12 minutes, stirring occasionally to prevent sticking, until pasta is tender but not mushy.
  7. Remove lid and stir in 1 ½ cups (170g) shredded cheddar cheese and ½ cup (60g) cubed Velveeta cheese (if using) until melted and creamy. Add a splash of milk if sauce is too thick.
  8. Taste and adjust seasoning with salt and pepper if needed.
  9. Serve warm immediately.

Notes

Stir often during simmering to prevent pasta from sticking. Use medium heat to avoid evaporating liquid too quickly. For a smoother cheese sauce, mix sharp cheddar with Velveeta or cream cheese. If sauce thickens when reheated, add a splash of milk. Ground turkey or lentils can be used as substitutes for beef. Use vegetable broth and plant-based cheese for a vegetarian or dairy-free version.
