A quick and easy one pot meal combining ground beef, pasta, and melted cheddar cheese for a comforting and delicious dinner.

  • 1 lb ground beef (80/20)
  • 2 cups uncooked elbow macaroni
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup milk (whole or 2%)
  • 1 ½ cups shredded cheddar cheese
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Optional toppings: sliced pickles, diced onions, fresh parsley

Instructions

  1. Heat a large deep skillet over medium-high heat. Add ground beef and cook, breaking it up until no longer pink (5-7 minutes). Drain excess fat if desired.
  2. Add chopped onion and garlic to the skillet and sauté until softened and fragrant (2-3 minutes).
  3. Stir in beef broth, milk, tomato paste, Worcestershire sauce, and diced tomatoes. Bring to a gentle boil.
  4. Add uncooked elbow macaroni and stir to combine.
  5. Reduce heat to medium-low and cover with a lid. Simmer for 12-15 minutes, stirring every 5 minutes to prevent sticking, until pasta is tender but still slightly firm.
  6. Remove lid and stir in shredded cheddar cheese until melted and creamy. Season with salt and pepper to taste. Add a splash of milk if sauce is too thick.
  7. Serve warm with optional toppings such as sliced pickles or fresh parsley.

Notes

Stir regularly to prevent pasta from sticking. Use sharp cheddar for best flavor. Add extra broth or water if pasta absorbs liquid before fully tender. Leftovers reheat well with a splash of milk or broth. For gluten-free, use gluten-free pasta; for dairy-free, use plant-based milk and vegan cheese.
