  • 4 yellow onions, thinly sliced
  • 1 bulb garlic, roasted
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon thyme (fresh or dried)
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or croutons

Instructions

  1. Preheat oven to 375°F (190°C). Slice off the top of a garlic bulb, drizzle with olive oil, and wrap it in foil. Roast for about 40 minutes until soft and fragrant. Let cool before squeezing out the cloves.
  2. Melt 4 tablespoons of butter in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 25-30 minutes until golden brown and caramelized. Season with a pinch of salt.
  3. In a soup pot, combine the caramelized onions, roasted garlic, vegetable stock, thyme, and bay leaf. Bring to a boil, then reduce heat and simmer for 15 minutes to let the flavors meld.
  4. Remove the bay leaf and transfer the mixture to a blender (or use an immersion blender directly in the pot). Blend until smooth and creamy.
  5. Stir in the heavy cream and gently heat the soup over low heat for 5 minutes. Season with salt and pepper to taste.
  6. Ladle the soup into bowls and garnish with parsley or croutons. Enjoy warm!
