A creamy, fruity, and indulgent French toast bake with swirled cream cheese and blueberries, perfect for an effortless and comforting breakfast or brunch.

Ingredients

Scale
  • 8 cups thick-cut brioche or challah, cubed (day-old bread works best)
  • 1 ½ cups fresh or frozen blueberries
  • 8 oz cream cheese, softened
  • 6 large eggs, room temperature
  • 2 cups whole milk
  • ½ cup heavy cream
  • ⅓ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 2 tablespoons butter, melted (for greasing the baking dish)

Instructions

  1. Cube the brioche or challah into roughly 1-inch pieces. Spread them out on a baking sheet and let them dry out for a few hours or overnight if using fresh bread.
  2. In a large bowl, whisk together eggs, whole milk, heavy cream, sugar, vanilla extract, cinnamon, and salt until fully combined and smooth.
  3. In a separate bowl, beat the softened cream cheese until smooth and creamy. Optionally, add a tablespoon of sugar or vanilla for a sweeter swirl.
  4. Grease a 9×13-inch baking dish with melted butter. Spread half of the bread cubes evenly across the dish. Scatter ¾ cup of blueberries over the bread. Dollop half of the cream cheese in small spoonfuls over the mixture. Pour half of the custard evenly over the top.
  5. Repeat with the remaining bread, blueberries, cream cheese, and custard.
  6. Using a butter knife or skewer, gently swirl the cream cheese into the custard and bread layers without overmixing.
  7. Cover the dish tightly with plastic wrap and refrigerate for at least 6 hours or overnight.
  8. Preheat oven to 350°F (175°C). Remove plastic wrap and bake uncovered for 45-55 minutes until the top is golden brown and custard is set (a knife inserted should come out clean). Tent with foil if top browns too quickly.
  9. Let the bake rest for 10-15 minutes before slicing and serving.

Notes

Use day-old or slightly dry bread to prevent sogginess. The overnight soak is key for creamy texture. Gently swirl cream cheese to create pockets of creaminess. Use thick-cut bread like brioche or challah for best results. If top browns too fast, tent with foil. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
