  • 2 tablespoons (30 ml) pure maple syrup
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1/4 cup (40 g) black chia seeds
  • 1/2 cup (80 g) fresh or frozen pomegranate seeds
  • 1/2 cup (60 g) crumbled cookies (shortbread, sugar cookies, or gluten-free almond cookies)
  • Optional toppings: toasted coconut flakes, chopped nuts (e.g., pistachios), extra maple syrup

Instructions

  1. Combine the coconut milk and maple syrup in a mixing bowl and whisk until smooth.
  2. Stir in the vanilla extract.
  3. Sprinkle chia seeds evenly over the liquid and stir briskly to prevent clumping.
  4. Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight. Stir once or twice during the first hour to keep chia seeds evenly distributed.
  5. If the pudding is too thick in the morning, stir in a splash of coconut milk or water to loosen it.
  6. Rinse pomegranate seeds and crumble cookies while pudding chills.
  7. Spoon the chia pudding into serving bowls or jars and top with pomegranate seeds and cookie crumbles. Add optional toasted coconut flakes or nuts if desired.
  8. Serve immediately or keep refrigerated for up to 3 days. Add cookie toppings just before serving to maintain crunch.
