A quick and easy creamy chia pudding bowl with fresh strawberries and honey, perfect for a wholesome dessert or romantic breakfast. This recipe is naturally gluten-free, dairy-free, and can be adapted for vegan diets.

  • 3 tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • 12 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/2 cup fresh strawberries, sliced
  • 2 tablespoons Greek yogurt (optional)
  • Pinch of ground cinnamon (optional)
  • Toasted almonds or granola for topping (optional)

Instructions

  1. In a medium bowl, whisk together 3 tablespoons of chia seeds and 1 cup of unsweetened almond milk until well combined and no clumps remain.
  2. Stir in 1-2 tablespoons of honey and 1/2 teaspoon of vanilla extract. Add a pinch of ground cinnamon if desired and mix evenly.
  3. If using, gently fold in 2 tablespoons of Greek yogurt for extra creaminess.
  4. Transfer the mixture into a jar or bowl with a lid and refrigerate for at least 4 hours or overnight. Stir again after 30 minutes to prevent clumping.
  5. Wash and slice about 1/2 cup of fresh strawberries. Optionally toss with a little honey or lemon juice for brightness.
  6. Once pudding is set, stir well and spoon into serving bowls or jars. Top with fresh strawberries and drizzle with extra honey. Add toasted almonds or granola for crunch if desired.

Notes

Stir the pudding mixture after 30 minutes in the fridge to prevent chia seed clumps. Adjust sweetness before chilling. If pudding is too thick, add a splash of almond milk before serving. Use maple syrup or agave nectar as vegan sweetener alternatives. Store leftovers in an airtight container in the fridge for up to 3 days.
