A creamy, velvety chia pudding combined with ripe bananas and rich dark chocolate, perfect for a romantic breakfast or special occasion.

  • 3 tablespoons chia seeds
  • 1 cup full-fat canned coconut milk (can substitute almond or oat milk)
  • 12 tablespoons maple syrup (adjust to taste)
  • ½ teaspoon vanilla extract
  • 1 large ripe banana, sliced
  • 1 ounce dark chocolate (70% cacao or higher), chopped or shaved
  • A handful of fresh strawberries or raspberries (optional)
  • 1 tablespoon toasted coconut flakes (optional)
  • Pinch of sea salt

Instructions

  1. Combine 1 cup of full-fat coconut milk and 3 tablespoons of chia seeds in a mixing bowl. Whisk gently but thoroughly to prevent clumping (about 2 minutes).
  2. Stir in 1-2 tablespoons of maple syrup and ½ teaspoon of vanilla extract. Mix well to blend flavors evenly.
  3. Cover the bowl or jar and refrigerate for at least 4 hours, preferably overnight, until the chia seeds absorb the liquid and create a creamy, gel-like texture. Stir gently and add a splash of milk if too thick.
  4. Slice 1 large ripe banana into thin rounds. Chop or shave 1 ounce of dark chocolate. Prepare optional berries and toasted coconut flakes if using.
  5. Once pudding is set, stir to fluff it up. Spoon pudding into serving bowls or jars. Arrange banana slices on top, sprinkle chopped dark chocolate, and add optional berries and coconut flakes.
  6. Add a tiny pinch of sea salt over the top to balance sweetness and enhance chocolate flavor. Serve immediately or refrigerate up to 2 days.

Notes

If pudding is too runny after soaking, add an extra tablespoon of chia seeds and let sit for another hour. Use ripe bananas for natural sweetness and creaminess. A pinch of sea salt on top enhances the chocolate flavor. Can substitute maple syrup with honey or agave syrup. For nut allergies, skip nuts and use toasted seeds.
