Instructions

  1. Toast the shredded coconut in a dry skillet over medium heat, stirring frequently until golden brown and fragrant, about 3-5 minutes. Set aside to cool.
  2. Combine 1 cup old-fashioned rolled oats and 2 cups milk in a medium saucepan.
  3. Stir in 2 tablespoons maple syrup, 1 teaspoon vanilla extract, and a pinch of salt.
  4. Bring the mixture to a gentle simmer over medium-low heat, stirring occasionally to prevent sticking. Cook for about 15 minutes until oats are tender and creamy. Add a splash of milk if too thick.
  5. Check for creaminess; the mixture should be thick but scoopable and velvety.
  6. Remove from heat and let sit uncovered for 2 minutes to thicken slightly.
  7. Spoon the creamy oatmeal into serving bowls. Top with fresh raspberries, toasted coconut flakes, a dollop of yogurt if using, and chopped nuts if desired.
  8. Drizzle extra maple syrup over the top if additional sweetness is desired.
