Ingredients

Scale
  • 1.5 pounds fresh boneless chicken tenders
  • 1 cup all-purpose flour (120 grams)
  • 1/4 cup cornstarch (30 grams)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs, room temperature
  • 1/2 cup hot sauce (120 ml), classic buffalo-style like Frank’s RedHot
  • 3 tablespoons unsalted butter (43 grams), melted
  • 1/2 cup crumbled blue cheese (115 grams)
  • 1/4 cup Greek yogurt or sour cream (60 grams)
  • 2 tablespoons milk (30 ml)
  • 1 teaspoon lemon juice

Instructions

  1. Pat the chicken tenders dry with paper towels and set aside.
  2. In a bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, salt, and pepper.
  3. Beat eggs in a separate bowl until smooth.
  4. Dip each chicken tender into the egg wash, letting excess drip off, then dredge thoroughly in the flour mixture. Press lightly to adhere coating. Set aside on a plate.
  5. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  6. Arrange chicken tenders in a single layer in the air fryer basket without overcrowding.
  7. Cook for 10-12 minutes, flipping halfway through, until golden brown and internal temperature reaches 165°F (74°C).
  8. While tenders cook, melt butter in a small saucepan or microwave-safe bowl. Stir in hot sauce until combined.
  9. Transfer cooked tenders to a large bowl, pour buffalo sauce over, and toss gently to coat evenly.
  10. In a small bowl, mix blue cheese, Greek yogurt or sour cream, milk, and lemon juice until smooth but still chunky. Add more milk if needed for drizzle consistency.
  11. Serve tenders drizzled with blue cheese sauce or serve sauce on the side for dipping.

Notes

Pat chicken dry before coating to ensure crispiness. Don’t skip cornstarch in the coating for extra crunch. Preheat air fryer for best results. Cook tenders in batches if needed to avoid overcrowding. Flip halfway through cooking. Adjust buffalo sauce heat by adding more or less hot sauce or butter. Blue cheese drizzle can be thinned with milk for desired consistency. For extra crispiness, spray air fryer basket lightly with cooking spray before cooking.
