Instructions

  1. Pat the fish sticks dry with paper towels to remove excess moisture; cut fish fillets into uniform sticks about 3 inches long and 1 inch thick.
  2. Set up dredging stations: place flour in one bowl, beaten eggs in a second bowl, and mix panko breadcrumbs with Parmesan, garlic powder, onion powder, paprika, salt, and pepper in a third bowl.
  3. Dredge each fish stick in flour, shaking off excess, then dip into beaten eggs, letting extra drip off, and press firmly into breadcrumb mixture to coat evenly.
  4. Place coated fish sticks on a baking tray or plate and let rest for about 5 minutes to help coating adhere.
  5. Preheat air fryer to 400°F (200°C) for 3-5 minutes if required.
  6. Lightly spray air fryer basket with cooking spray. Arrange fish sticks in a single layer without touching; cook in batches if necessary.
  7. Air fry at 400°F (200°C) for 10-12 minutes, flipping halfway through at about 6 minutes, until golden brown and crispy outside and flaky inside.
  8. Check doneness by ensuring internal temperature reaches 145°F (63°C) or fish flakes easily with a fork.
