Ingredients

Scale
  • 2 large sweet potatoes, peeled and cut into 1/2-inch thick fries
  • 2 tablespoons olive oil (or avocado oil)
  • 1 tablespoon cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (sea salt preferred)
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of cayenne pepper
  • Optional: fresh parsley for garnish

Instructions

  1. Peel 2 large sweet potatoes and slice them into 1/2-inch thick fries, keeping them as uniform as possible for even cooking.
  2. Place the cut fries in a large bowl of cold water and soak for at least 30 minutes (up to 2 hours) to remove excess starch.
  3. Drain the fries and pat them completely dry with paper towels or a clean kitchen towel.
  4. Toss the dried fries in 1 tablespoon of cornstarch until evenly coated.
  5. Drizzle 2 tablespoons olive oil over the fries, then sprinkle 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1 teaspoon salt, and 1/2 teaspoon black pepper. Toss to coat evenly.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Spread fries in a single layer in the air fryer basket without overcrowding. Cook for 12-15 minutes, shaking the basket halfway through.
  8. Check for doneness; fries should be golden brown and crispy on the edges, tender inside. Add 1-2 minutes if extra crispiness is desired, watching closely to prevent burning.
  9. Serve immediately, optionally garnished with fresh parsley and extra salt.

Notes

Soaking the fries for at least 30 minutes is essential to remove excess starch and achieve crispiness. Dry fries thoroughly before coating with cornstarch and oil. Avoid overcrowding the air fryer basket to ensure even cooking and crispiness. Shake the basket halfway through cooking. Preheat the air fryer for best results. Reheat leftovers in the air fryer at 350°F for 3-5 minutes to regain crispiness; avoid microwaving.
